A new head chef has been appointed at 62 The Bank in Barnstaple.

Tom Ridler has taken on the role at the one AA Rosette bistro, alongside leading the kitchen at the adjoining Royal & Fortescue Hotel.

The appointment was confirmed by the Brend Collection, which owns both venues.

Tom began his career as an apprentice with the group and has since worked in Michelin-starred kitchens in France.

He has now returned to his hometown to head up the kitchen team.

62 The Bank is known for its bistro-style menu and period features, including oak-panelled walls and a 17th-century plaster ceiling.

A spokesperson for the Brend Collection said: “His approach respects the much-loved classics while introducing a new level of creativity and sophistication to the bistro.”

The company said the appointment is part of its ongoing investment in staff development through the Brend Training Academy.
