ADDING to Jess Cook's culinary expertise, Darren Smith has joined the team at Tyme Restaurant at Trimstone Manor Country House Hotel.

Darren started his cooking experience with six years at the Royal Berkshire Hilton and draws his inspiration from Northern Italy and France, where he also spent several seasons.

Darren, who is from Newcastle, joins renowned local chef Jess Cook who cut his teeth at the Dorchester in London,
